Who is Herman? We don?t know where he came from, but we have seen him all across the U.S. All we know about him is what he eats: a cup of flour, a cup of milk, and a half cup of sugar, every five days.
If you haven?t met him yet, we will tell you that Herman is a sourdough culture you mix up from flour, sugar, and water. How a yeast starter got nicknamed Herman is anybody?s guess, but the name pops up frequently in self-published cookbooks.
You store Herman in a glass crock, stirring occasionally, feeding him as required. Nourished properly, he thrives.
After 10 days, Herman is 5 cups? worth of bread or cake starter. Now is the time to divvy him up, two cups for baking, one cup to grow, and a couple of cups for friends. The friends take their cups, feed them and, in 10 days, they each have 5 cups. Then they divide it up, and so the process goes, an edible chain letter by which Herman travels across the land.
